Classic Christmas Eggnog Recipe
If you love this classic, rich and boozy Christmas drink, you will love our amazing eggnog recipe. With festive spices, lots of cream and a hit of alcohol, it’s the perfect warming drink for sipping around the tree on Christmas Eve.
Ingredients
2 cups milk (full cream is best)
6 large egg yolks
½ cup caster sugar
1 cup cream
1 cup whiskey or rum
½ tsp vanilla extract
½ tsp cinnamon
½ tsp nutmeg
Whipped cream, to serve
Method
Add milk, spices and vanilla to a saucepan. Heat on the stove to a low boil.
Whisk the egg yolks and sugar. Slowly add the hot milk to the egg and sugar mixture. This tempers the eggs – adding milk too quickly will cause them to scramble. Whisk until combined.
Return mixture to saucepan. Cook over medium heat until thick. Do not let the mixture boil. Remove from heat and stir in the cream and the alcohol of your choice.
Refrigerate until cool. To serve, garnish with whipped cream.
Tips
If you’re looking to make an alcohol-free or child-friendly eggnog, simply leave out the whiskey or rum.
Whiskey creates a more intense flavour, while rum adds more sweetness. Try both and see what your favourite is!
Opt for a mid-range whiskey, bourbon or rum. Cheaper alcohol has a harsh taste that will cut through the sweet creaminess of the eggnog.
Sprinkle some extra cinnamon on top of the finished drink for a festive look.
Eggnog can last for four days when stored in the fridge in an airtight container. Make it ahead of time so it’s one less thing to worry about at Christmas!
